Honey Sponge Cake Recipe

Ingredients:

-1/3 cup matzoh meal
-1/3 cup potato starch
-1/2 cup sugar
-1 teaspoon cinnamon
-1/4 teaspoon ground ginger
-1/8 teaspoon nutmeg
-8 eggs, separated
-1 egg white
-1/4 cup vegetable oil
-1 cup honey

Directions:

Preheat oven to 325 F (160 C). Lightly oil a 10″ tube pan.

In a large bowl, mix the matzah meal, potato starch, sugar, cinnamon ginger and nutmeg. Make a hole in the center of the mixture and drop in the egg yolks, one at a time. Beat well after each yolk is added. Then beat in the oil and honey.

Using an electric mixer, beat the 9 egg whites until stiff (but not dry). Fold the mixture into the batter gently.

Pour mixture into the greased pan and bake for approximately one hour, or until the top of the cake is a golden brown and a cake tester comes out clean.
