Orange Sponge Cake Recipe

Ingredients:

-1 1/2 cup sugar
-6 eggs
-1 large orange (rind and juice)
-1 1/2 cup cake flour
-1/2 teaspoon salt
-1/2 teaspoon cream of tartar

Directions:

Put sugar in large bowl. Add yolks to sugar. Beat. Grate rind and add to sugar and egg mixture. Add orange juice (if necessary add water to make 8 tablespoons liquid). Beat while adding liquid to sugar and egg mixture until lemon colored. Sift flour and sift with salt. Add to first mixture.

Beat egg whites with wire whip until light. Add cream of tartar and beat until it will hold a point. Turn into batter and fold. Put in ungreased tube pan. Bake at 250 degrees increasing to 325 degrees. Bake 80 minutes. Turn oven off during last 10 minutes in oven.
