Gianduja Sponge Cake Recipe

Ingredients:

-2 1/2 cups (spooned / leveled) cake flour

-2 tbsp cocoa powder

-1 1/2 tsp baking powder

-1/2 tsp baking soda

-1/2 tsp salt

-1/3 cup butter, softened

-3 tbsp Nutella

-1/2 cup sugar

-2 eggs, beaten

-1 tbsp vanilla

-1 cup plain, fat-free yogurt

Directions:

Preheat oven to 350F.

Line bottom of an 8″ spring-form pan with parchment paper. then grease and flour the sides of the pan. Set aside.

Sift together cake flour, cocoa, baking powder, baking soda and salt. Set aside.

Beat together butter and Nutella.

Add sugar, beating on high speed for about 3 minutes.

Add eggs and vanilla, beat for 2 minutes.

Beat in flour mixture alternately with yogurt.

Pour batter into into prepared pan and smooth the top.

Bake for about 45 minutes or until tests done.

Let cool in pan for 10 minutes before inverting onto a cooling rack and cooling completely.

Ingredients:
Cake:
-4 cups watercress, roughly chopped
-4 egg yolks, 4 egg whites, 1 whole egg
-6 tbsp oil
-4 tbsp milk
-1 cup sugar
-1 cup flour
-1 tsp baking powder
-2 tbsp Port Wine or Madeira
-1 pinch each: cinnamon, cloves, cardamom
Chocolate sauce:
-4 oz 70% cocoa chocolate, broken into small pieces
-6 tbsp Grand Marnier
-1 tsp butter
-3 tbsp confectioner’s sugar
-7 tbsp sour cream

Directions:
Preheat oven. Prepare a baking pan of your favorite format.
Mix the egg yolks, egg, watercress, sugar, milk and port in a food processor until the ingredients become a fine paste.
Transfer the paste to a bowl and add the flour, spices and baking powder.
Finally whisk the egg whites until stiff (similar to meringue) and add gently to the watercress mix.
Bake for 30 to 40 minutes. Keep an eye on the baking process so your cake don’t get burned.
Chocolate sauce: Melt chocolate with sugar and the Grand Marnier over low heat (8 minutes). Take it off the heat and add butter and cream. It is ready to serve.

Ingredients:

-12 Eggs, separated
-1 1/2 cup Sugar
-2 tablespoons Cold water
-1 orange, juice and grated rind of
-1/2 pound Sweet chocolate, grated
-3/4 cup Matzo cake flour

Directions:

Preheat oven to 350F.

Beat egg yolks and sugar until light and fluffy (about 7 minutes). Add cold water, orange juice, orange rind, chocolate and cake flour. Gently fold in stiffly beaten egg whites.

Pour into a 10-inch tube pan with removable insert. Bake for 55 to 65 minutes or until cake springs back when gently pressed. Cool completely, inverted on cake rack, before removing from pan.
